Fresh tomatoes, avocado, and blue cheese topped with moist and tender chicken cooked with a couple of bacon slices to add that necessary fat and flavor. This is a great camp favorite, or an easy home meal for the Keto enthusiast.
Ingredients (Serves 4):
- 2 fresh heirloom tomatoes
- 1 ripe avocado
- 4 chucks of blue cheese or softer cheese or your choice
- 8 slices of bacon (applewood smoked or regular)
- 8 chicken tenders
- Fresh basil and fresh opal basil for garnish
- Salt and pepper to taste
Melt your bacon in your cast iron skillet (or other favorite camping pan), add your raw chicken tenders and flavor with a little salt and pepper. Cook until lightly browned.
Cut the tomatoes into thick slices of about a 1/4 inch. Quarter your avocado and make thin, fan slices of each quarter.
Plate the tomatoes, two or three slices on the bottom of the plate. Add several chunks of cheese on top of the tomatoes, follow with the avocado, place the bacon next and then stack the browned chicken tenders on top.
Ribbon cut the basil and garnish the stack.
