Grilled Sausage with Skewered Potatoes and Bacon

A hot hibachi and three simple ingredients is all you need for this killer camping meal. Your favorite sausage served with skewered baby potatoes and bacon!

Ingredients (Serves 4):

  • 8 sausages of your choice
  • 16 small baby potatoes (Yukon Gold is a great choice)
  • 4 to 6 slices of bacon

While you are bringing your hibachi or grill up to temperature, boil your baby potatoes until they are al dente. Once they are almost fully cooked, bring them out of the pan and set aside.

Put your sausage on the grill. Put your bacon on the grill. Before the bacon is fully cooked, place the strips on top of the sausage to allow the bacon fat to flavor the sausage and to slow the cooking.

When the bacon is finished — not crisp, but still flexible — sew it on the skewer with the small potatoes. Create one skewer for each plate.

Then lightly grill the skewers until the potatoes are finished and have a nice grill marks on them.

Plate the sausages, layer with your skewers and garnish with your favorite mustards and/or hot sauce or Sriracha.

Watch Chef Kelly whip these out lakeside.
